Soft fluffy peanut butter filled cupcakes, a salted banana caramel in the middle and a delicious cream to top it off! 

The potato starch and cake flour in the cupcakes makes it even fluffier than using regular all purpose flour! The oil let it stay moist for a long time, even if you store it in the fridge. 

JOBBIE Peanut Butter Banana Salted Caramel Vegan Cupcakes

INGREDIENTS

Peanut Butter Cupcakes 

  • 240 ml soy milk 
  • 22 ml white vinegar 
  • 15 ml vanilla extract 
  • 140 ml vegetable oil 
  • 110 g caster sugar 
  • 150 g cake flour 
  • 24 g potato starch 
  • 2 tsp baking powder 
  • ½ tsp baking soda 
  • ½ tsp salt 
  • 180 ml JOBBIE Creamy Pure Peanut Butter 

Salted Banana Caramel 

  • 50 g caster sugar 
  • 3 ripe medium sized bananas 
  • 45 ml coconut milk 
  • ½ tsp sea salt 

Banana Salted Caramel Cream 

  • 240 ml non dairy whipping cream 
  • ½ of the banana salted caramel

PREPARATION 

Peanut Butter Cupcakes 

  1. Preheat oven to 180°C. 
  2. Whisk together your milk and vinegar in a bowl and set aside for 5 mins. 
  3. In a separate bowl, sift your cake flour, potato starch, baking powder, baking soda & salt. 
  4. Add your wet ingredients to the dry ingredients and whisk for only 30 seconds or until the big lumps of flour are gone. *the small lumps are totally fine so don’t over mix it. 
  5. Scoop into 12 cupcake liners till 3/4 of the way full. add one tbsp of peanut butter into each cupcake liner and swirl it around using a toothpick. 
  6. Bake it for 15-17 mins or until a toothpick comes out clean. 

Banana Salted Caramel 

  1. Pour the sugar into a pot on low- med heat. wait for it to start melting and stir occasionally until you get an amber/med brown colour. 
  2. Get some ripe bananas and mash them really well. add coconut milk and mix again. 
  3. Take it off the heat and add the mashed banana and coconut milk until mixed together well. 
  4. Add sea salt, mix then leave to cool. 
  5. Cut a small hole in the middle of each cupcake and add in the cooled banana salted caramel inside. 

Banana Salted Caramel Cream 

  1. Whip up non dairy whipping cream till soft peaks form. 
  2. Add in half of the cooled banana salted caramel then mix well. 
  3. Pipe the cream onto each cupcake. Enjoy!
